Ingredients

For the Batter:

  • 2 eggs
  • 1 cup plain unsweetened yogurt
  • 3 tablespoons coconut oil or vegetable oil
  • 125 g fine semolina (or oat flour)
  • 125 g all-purpose or whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Natural sweetener of your choice
    👉 (Stevia / Erythritol / Diet sweetener)

For the Filling (Energy Cream):

  • 250 ml milk
  • 1 teaspoon cornstarch
  • 1 teaspoon vanilla extract
  • Natural sweetener of your choice

For Decoration (Optional):

  • Shredded coconut or ground almonds
  • A pinch of cinnamon (optional)

 Instructions

  1. Beat the eggs with the sweetener and vanilla extract.
  2. Add the yogurt and oil, then mix well.
  3. Add the semolina, flour, and baking powder. Stir until you get a smooth batter.
  4. Pour the batter into a greased baking pan.
