Baked Shrimp and Spinach Gratin

Instructions

  1. Preheat the oven to 190°C (375°F). Lightly grease a medium-sized baking dish.

  2. Sauté the spinach:
    Heat 1 tablespoon butter and 1 tablespoon olive oil in a pan. Add the spinach and cook for 1–2 minutes until wilted. Set aside.

  3. Prepare the cream sauce:
    In the same pan, melt the remaining butter. Add the garlic and cook gently for about 30 seconds.
    Pour in the heavy cream, season with salt, pepper, and paprika, and let it simmer for 2–3 minutes.
    Stir in the parmesan until it melts and the sauce thickens slightly.

  4. Assemble the gratin:
    Spread the spinach evenly into the baking dish.
    Pour the cream sauce over the spinach.
    Arrange the shrimp on top and sprinkle mozzarella all over.

  5. Bake:
    Transfer to the oven and bake for 20–25 minutes, or until the top is golden and the shrimp are fully cooked.

  6. Garnish:
    Sprinkle freshly chopped parsley before serving.

Serving Suggestions

  • Serve with rice, pasta, crusty bread, or a fresh green salad.

  • It also works well as a low-carb main dish on its own.
