Farmer’s Casserole

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.

  2. In a large skillet, heat the olive oil over medium heat. Cook the bacon until crisp. Transfer to a paper towel-lined plate, then chop into pieces.

  3. Spread the diced potatoes evenly in the prepared baking dish. Sprinkle the chopped green onions over the potatoes.

  4. In a large bowl, whisk together the beaten eggs and evaporated milk. Pour this mixture evenly over the potatoes and green onions.

  5. Scatter the chopped bacon over the top, followed by the shredded cheese. Season evenly with the salt and pepper.

  6. Bake for 45-55 minutes, or until the top is golden brown and the center is fully set.

  7. Remove from the oven and let the casserole rest for 10 minutes before slicing and serving.
